After seven years of research, Innovi has filed its 27th patent for Sûvy, a sugar substitute made up of two ingredients, erythritol derived from fruit fermentation, and polydextrose, a vegetable dietary fiber, and has been gaining consensus since its international launch in Paris four months ago. “Today, we produce 300 tons per week. In a few years, by 2030, we aim to reach 1 million tons per year, equivalent to 3,000 tons per day. These are no longer modest goals,” says the business leader. The expansion of the Layrac laboratory on an additional 5 hectares is on track, with the enlargement permit obtained, and the acquisition of nearby buildings from the Brulhois cellar is currently being finalized.

Essential with “20 employees at the product launch, 50 by the end of 2025, and nearly 90 in the first quarter,” through continuous recruitment, aiming to become the leading private employer in the department in a few years.

Green lights
